Fried Chicken is not terribly healthy.

If you need to fry chicken, remove the skin, use lean chicken which 
you have removed most of the fat from and try using some of the 
more healthy oil choices.

Healthy oils would be olive oil, flax seed oil, sunflower oil, 
peanut oil, corn oil, soybean oil, safflower oil, grapeseed oil, 
walnut oil, flaxseed oil and canola oil.

Canola oil, sunflower oil, and peanut oil are good for searing and frying. 

Baking, sautéing and stir-frying may be done with grapeseed oil, 
safflower oil or sunflower oil.  For sauces, baking, and pressure cooking, 
try olive oil, corn oil, pumpkinseed oil, and walnut oil. 

Creole Fried Chicken

5 Points per serving

6 (5 ounce) chicken breasts (boneless and skinless)
1 cup crushed corn flakes
1/4 cup buttermilk
1 teaspoon Creole Seasoning
1/8 teaspoonof Salt and Pepper

Combine Creole Seasoning and corn flake crumbs. Brush chicken with
buttermilk and roll chicken in crumb mixture. Place chicken in baking dish
and bake at 375 degrees for 1 hour.

Fried Chicken Giblets in Lemon Juice


2 cups chicken giblets
2 tablespoons ghee
1 large onion , finely chopped
3 large cloves of garlic, crushed
1/2 teaspoon mixed spices
4 tablespoons fresh lemon juice
1/4 c chopped parsley
salt
pepper

Wash and drain the giblets. Heat the ghee over high heat. Sauté' giblets in
the hot ghee until almost cooked through , about 15 minutes. Add onions and
garlic and sauté until the onions are soft. Add salt, pepper , mixed spices
and lemon juice. Sauté' another 3 minutes.

Best way to eat: Garnish with parsley, may be served hot or cold.

In western countries they feed this stuff to animals! No kidding. But I am
telling you, this is delicious food. My favorite. You have to try this one.

Note: You may use chicken livers and or hearts, do not cook livers as long
to prevent drying them out. Hearts tend to be chewy and crunchy. Arabs and
Chinese know how to not waste any part of an animal, and make taste good.

Servings: one side dish or appetizer
