Chicken Gumbo Soup RecipesLow-fat Chicken Gumbo RecipeYields six one-cup servings, 3 cups chicken broth 1/2 cup onion, chopped 1/4 cup celery, chopped 10 oz. pkg. cut frozen okra 16 oz. can tomatoes 1/2 tsp. salt 1/8 tsp. pepper 1/4 cup rice uncooked 2 cups chicken, cooked, diced Skim fat from cold chicken broth. Heat broth to boiling. Add vegetables, seasonings, rice and chicken. Cover and cook slowly 15 minutes, until vegetables and rice are tender. Slow Cooker Chicken and Rice Gumbo SoupTotal: 7 hr 50 min Makes 6 servings 3/4 pound boneles skinless chicken, cut into 1-inch pieces 1/4 pound fully cooked smoked sausages, (two 5-inch sausages), chopped 2 medium celery stalks (with leaves), sliced (1 1/4 cups) 1 large carrot, chopped (3/4 cup) 1 medium onion, chopped (1/2 cup) 1 can (14 1/2 ounces) stewed tomatoes, undrained 5 cups water 2 tablespoons chicken bouillon granules 1 teaspoon dried thyme leaves 1 package (10 ounces) frozen cut okra, thawed and drained 3 cups hot cooked rice Red pepper sauce, if desired 1. Mix all ingredients except okra, rice and pepper sauce in 4- to 5-quart slow cooker. 2. Cover and cook on low heat setting 6 hours 30 minutes to 7 hours or until chicken is no longer pink in center. Stir in okra. Cover and cook on low heat setting 20 minutes longer. 3. Spoon soup over rice in soup bowls. Serve with pepper sauce. Chicken Gumbo Soup RecipeYield: about 8 cups 1 large chicken breast, diced 4 stalks celery, diced 2 T onion, chopped 1 large (16 oz.) can chicken broth 1 4 oz. can chopped green chilis 1 14.5 oz can peeled tomatoes (no sugar) 1 t chopped garlic 4 slices bacon, diced and fried, drain grease 1 t red Tabasco Sauce 1 c frozen okra, sliced 1 c water Put all ingredients in crock pot. Cook on low 7-8 hours. Chicken Gumbo RecipeYield: 12 Servings 12 c Water 1 c chicken breast, diced 6 ts Vegetable Bouillon granules 4 Tomatoes, fresh or 1-lb can 1/2 c Corn, fresh or canned 1 Celery rib, diced 1 Onion, diced 1/2 c Okra, cut 1/4 c Rice, white or brown 1 c Shredded cabbage (optional) Directions: Place all ingredients in a large pot, bring to boil, cover and simmer about 20 minutes until all vegetables are done. 1-l/2 C serving equals about 35 calories. |
